This (optional) black bean chili recipe is for those non recipe followers.
Chili Ingredients:
1 (or 2) lbs of ground beef or ground turkey (browned, with anything that looks funky removed)
1 (or 3) onions, diced.
5-10 (pick your poison) diced garlic cloves.
A red pepper, or a yellow pepper, or an orange pepper, or a jalapeno pepper, or no peppers at all.
Chipotle Chili Powder,or any other type of chili powder.
Cumin, if you have it.
Cilantro, if you love it as much as I do.
Texas Pete, or similar.
2 cans (15 oz) of black beans
2 large cans of diced tomatoes
1 bag (regular size) frozen white corn
Jalapeno pepper jack cheese.
Cooking Instructions:
Brown your meat. Add some chili powder – maybe 2 tbsps? (to taste) and cumin (maybe 2 tsps). Chop your veggies of choice. Add all but the cilantro. Cook for a while (low). Then add the canned items (drain beans first). Then add the corn. Cook some more. Add hot sauce to taste. Add cilantro (chopped) if you like it that way. Cook the whole thing on low for an hour or so. It’s better the next day. If you don’t want to put cilantro in your chili, then just garnish with the cilantro. Shred some pepper jack cheese over the final product if you like that. Enjoy with chips if you have them!!
