Enhance the smell, taste and color of your chili by using homemade chili powder. This simple and easy recipe will make enough chili powder for a few batches of chili.

Chili Powder
Ingredients
- 3 dried ancho chiles
- 3 dried cascabel chiles
- 3 dried arbol chiles
- 2 tablespoons whole cumin seeds
- 2 tablespoons garlic powder
- 1 tablespoon dried oregano
- 1 teaspoon smoked paprika
Directions
Remove stems and seeds from chilis and discard. Slice the chilis into small pieces. Over medium-high heat, place the chile slices and cumin into a medium nonstick saute pan. Cook, moving the pan around constantly, until you begin to smell the cumin toasting, approximately 4 to 5 minutes. Be careful to not let the chilis burn. Set aside and cool completely. Once cool, place the chiles and cumin into a blender or food processor along with the garlic powder, oregano, and paprika. Process until a fine powder is formed. Allow the powder to settle for at least a minute before removing the lid of the blender/food processor. Mix the chili powder well before storing in an airtight container. The homemade chili powder should be good for up to 6 months.
Note: Adjust the amounts of each ingredients until you find the flavor and heat that you like.
